is a very popular South Indian dish. Also traditional South Indian Tamil Brahmin’s favorite recipe,Puli Sadam is best for lunchbox and for travel as it doesn’t get spoiled easily, also the resting time enhances the flavour of Tamarind rice/Puli sadam,Tamarind rice/Puliyodharai are very famous for tongue tickling taste, I’ve given the step by step pictures for beginners & bachelors.. try and enjoy with your family ..

Instructions
  1. Dry roast fenugreek seeds, coriander seeds, chana dal, urad dal and red chillies in a low flame until you get a nice aroma.
  2. Transfer to a mixer and grind it to a fine powder. Our spice powder for puliyodharai is ready. Keep it aside.
  3. Soak a gooseberry size tamarind in a cup of water.
  4. Heat oil and add Urad dal,Chana dal,Cumin seeds and Mustard seeds, once it splutters add peanuts and roast for 2 MInutes.
  5. Add in crushed Garlic and curry leaves, Saute for 1 mInute. Add in the dry red chillies and saute.
  6. Add in asofoetida, Turmeric powder and saute well. Add the tamarind water and salt.
  7. Let it boil until it reduces to a thick paste. Then add in the grinded powder and saute well.
  8. Store in a air tight container for about 1 Month and use it as a readymade mix. Keep refrigerated.
  9. Take cooked rice in a bowl and add little by little paste and mix well until it is coated well in the rice.
  10. Finally add coriander leaves and mix well.
  11. Tasty puliyodharai is ready to be packed or to be served. Enjoy with vadagam or appalam.
Recipe Notes
  • Roast the ingredients in a very low flame.
  • You can add less or more tamarind paste according to sourness you need in the rice. Adjust as per your preferences.
