Instructions
  1. Heat 1 tbsp of oil,Add in chana dal, urad dal, Cumin seeds and garlic. Fry till golden.Add shallots and half tomato and saute well.
  2. Wash and peel the skin of ridgegourd. You can use the flesh in other recipes, for this one you need only the peel. Add the peeled skin and red chillies and saute well till the colour of the skin changes brown. Add tamarind and saute for 2 minutes.
  3. Add the sauted ingredients to a blender and add salt and 3-4 curry leaves.
  4. Add thinely cut coconut and grind to a smooth paste.
  5. For seasoning.,Heat oil in a pan, add in mustard seeds, cumin seeds,urad dal, finely chopped shallot and curry leaves. Let them fry, Pour this into the chutney and mix well.
  6. Tasty Ridge gourd chutney is ready to serve with dosa or idli.
Recipe Notes

Always choose a tender ridge gourd for better tastiness.

Adding tomato is optional.

Adding onion while seasoning is optional.It gives a different taste to the chutney.
