Mutton Gravy is a delicious Gravy When Cooked with Fresh Masala. It is always better to make Fresh Masala than to Use Packed Masala. There are Many Variations in Mutton Curries and this Curry is the South Indian Style made with Mortar/Ammi. Mutton Gravy Comes out very Tasty when it is open cooked than Pressure Cook Method.

Instructions
  1. In a Kadai, add Coriander Seeds, Cloves , Cinnamon Stick , Cardamom, Poppy Seeds , Cumin Seeds, Fennel Seeds and Pepper Seeds.
  2. Dry Roast in a low Flame till they leave a Nice Aroma. Transfer to a Plate.
  3. In the Same Kadai add 2 Tbsp of oil, add ginger , Garlic and Small onions and roast till they become Brown in Colour.
  4. Add Curry Leaves and a Cup of Coconut and Roast for 2 minutes.
  5. Now start Grinding the Roasted Spices first and they grind the remaining.
  6. Grind till it become a Smooth Paste.
  7. Add the mutton in a Clay pot and add Turmeric, Crushed Ginger & Garlic , Tomatoes , Required Salt and Water and Cover Cook till Mutton Is Cooked.
  8. Now Add the grinded Masala, Chilly Powder and Salt and mix Well.
  9. Add Required Water and Cook till Oil oozes out. Finally Garnish with Coriander Leaves.
  10. Now to Garnish Heat 2 Tbsp of Oil of Kadai and add Mustard Seeds , Cumin Seeds, Fennel Seeds and onion and Saute well.
  11. Onions Become Brown in colour, Add in the Curry Leaves and pour it Over Gravy.
  12. Tasty Mutton Gravy Is Ready. It Goes well with Rice , Chapati , Idli , Dosa , Naan and Everything.
Recipe Notes
  • Only add masala after when mutton is Cooked fully.
  • Open Cook of Mutton is very Healthy rather than Pressure Cook method.
  • Always Use mud Pots to make Gravy as it tastes Good and healthy Too.
