A legend from the kitchens of the Nizam of Hyderabad, also known as the Hyderabadi mutton biryani or mutton biryani is a spicy, fragrant and very tasty biryani in India. The traditional style of making the biryani is by cooking the raw meat with spices for a couple of minutes. You can also follow the same recipe using chicken instead of mutton.

Instructions
  1. Wash 1 1/2 kg mutton Pat dry and add ginger-garlic paste,turmeric Powder,salt,,two cups of water mix well and Pressure cook for 1 whistles and turn off heat, drain the mutton and keep it aside
  2. Heat the oil in thick bottom vessel and add cinnamon stick, cloves, Fennel Seeds ,Green Cardamom ,Kalpasi,Star Anise,Mace & bay leaf ,Fry for 1 minute
  3. Add one cup of onion and fry until onions are golden brown in color and add 2 spoon Curd (while start adding the spices start soak the Basmati rice in water about 20 to 25 minutes I used Royal Basmati Rice) and saute well
  4. Add each 1/2 cup coriander-Pudina leaves and saute for another 3 minutes.
  5. Add Garlic Paste saute for 2 -3 minutes until raw smell goes away
  6. Add Ginger Paste sauté for 3-4 minutes until raw smell goes away
  7. Add 1 cup Curd & salt and sauté for another 5 minutes
  8. Add each 1 cup coriander-pudina leaves and sauté for another 3 minutes
  9. Add cooked mutton and saute for another 5 minutes.
  10. Add Sliced Onion 3nos, sliced tomatoes 3 Nos and Grinded Red Chilies (Soak for 20 Minutes and Grind 25 Red Chilies) cook for 10 Minutes & till it turn mushy
  11. Add Salt to taste, 1 tspn lemon Juice and 5 tspn Ghee and cook for 3 minutes
  12. Add water ratio of 8 cup rice = 9 Cup water and boil until bubble begains to pop off the surface of the masala
  13. Add the 25 minutes Soaked rice and close the lid cover with wed cloth and cook for 30 minutes with medium flame
  14. Turn off the heat and keep it for 10 minutes. Open the lid and fluff it up.
  15. Serve this Tasty Mutton biryani with raita and enjoy with your family.
Recipe Notes

You can also leave it for two whistles according to your hardness of mutton.

Adding water is important while cooking mutton so that the mutton stock gives a nice taste to briyani.

Soak the rice when you are about to start,overtime soaking will lead to break of rice and less time of soaking will lead to uncooked rice.
