Tasty Chettinadu Mutton Curry recipe is one of the favorite recipe in south India, it is very tasty and delicious amazing mouthwatering recipe, Chettinadu recipes have a nice blend of spices which makes it unique and adds the taste and flavor to the dish. Mutton takes longer time to cook without pressure cooker. With the pressure cooker 2-3 whistles cooks mutton well done. If the pressure cooker is not used, it has to be cooked for at least an hour, it’s a perfect dish to serve during the house parties and your family and friends will love it for sure

Instructions
To Grind Chettinad Masala
  1. Dry Roast Dry red chilly,Pepper seeds,Coriander seeds,Cumin seeds,Fennel seeds,Cinnamon stick,Green cardamom,Cloves and star anise in a very low heat till nice aroma rise from that ingredients.
  2. Cool down and transfer it to a mixer and grind it to a fine powder.
To Grind Gravy Masala
  1. For making Gravy masala,to a kadai add 2 tspn of oil and roast ginger,garlic,Small onions and coconut till it changes brown in colour.
  2. Add in tomatoes and saute till it becomes mushy.
  3. Cool it down and transfer it to a mixer and grind it to a smooth paste.
To Make Curry
  1. Add Turmeric powder,Ginger Garlic paste,required water and pressure cook for 2 whistles.
  2. To a vessel add 5tspn of peanut oil, then add in curry leaves and shallots and saute well. Then add the grinded masala and saute well for 5 minutes.
  3. Then add in the grinded masala powder and saute well till raw smell goes. Then add in the cooked mutton pieces to it.Let it boil for 5 Minutes.
  4. Add in the required salt,Garam Masala powder and red chilli powder.
  5. Add required water and cover lid and cook for 10 Minutes. So the mutton pieces will be coated well in the masala.
  6. Finally garnish with coriander leaves.
  7. Tasty Mutton Gravy is ready to be served with rice,Chapthi,Dosa,Idli or Raagi kali.
Recipe Notes
  • Pressure cook the mutton according to the hardness of your meat.If it is more hard pressure cook it for 5 whistles until mutton is cooked completely.
  • Keep the flame very low when you roast the seeds,If it is over roasted or changes to black then the taste of the gravy is gone.
  • Check for spiciness when you add chilli powder,If that spicy is enough you can skip adding that.
