Instructions
  1. In a heavy bottomed pan, heat ghee, carrot to it. Fry until the raw smell of carrot goes away and becomes fragrant, add grated coconut fry for 5 minutes, and Keep a greased tray ready.
  2. Add milk and keep mixing. Once starts bubbling, keep the flame in medium always and keep stirring.
  3. After When the milk gets completely absorbed add sugar, after adding sugar mix will become very soft. Cook for about 10 minutes stirring continuously. Mix should be consistency of soft dough. After sometime, the mixture will start leaving the pan and thickens. Also the ghee will start to ooze Out.
  4. Add cardamom and keep stirring for about another 3-4 minutes, add fine chopped Almond & Pistachio nuts - 10-12 Nos
  5. Transfer mixture to the Ghee greased plate and press firmly into a square shape or desired shape, approximately 1/2 inch height.
  6. Spread Almond and pistachio nuts on top and press gently.Let the burfi sit for at least two to three hours before slicing.
Recipe Notes
  • Use the fresh Carrot and very fine grater for grating carrot.

 

  • The whole process should be in medium flame,Otherwise you may easily miss the right consistency.
