  1. Slit Brinjal into four sections as shown,
  2. Roast groundnuts, remove skin and grind it in a mixer
  3. Roast Cumin seeds,Pepper seeds. Fenugreek seeds and white sesame seeds. When it changes colour blend it to powder.
  4. In a pan Heat more oil than normal, add curry leaves and ginger garlic paste and saute well. Add chilly powder and turmeric powder and add the slitted brinjals. Let brinjals get sauted well in the oil.After 5 minutes add tamarind juice and let it cook for 5 minutes.
  5. Add the grinded powders and add required water and leave till oil oozes out.
  6. Tasty briyani brinjal is ready, Serve with puloa or briyani.
Recipe Notes

Try to choose baby brinjals which will give good taste to the gravy.
